Be patient. Change takes time.

Be patient. You didn’t gain weight or lose muscle mass overnight.
Be patient. People slip back, you are normal, keep at it.
Be patient. Your goals are just that… objective, aims, targets – they are there to keep you motivated.

Patience and passion were in play on today’s Your Life, Unlimited radio show, whether from Greg Efta, author of There’s a Lot of ‘P’ in Healthcare or from Chef Grant Mitchell or from the Community Food Centre director Kristina MacMillan.

Greg shared with us a question that could led to positive change: Do you let other people take power from you? Hmm, that’s good question to ponder this week and perhaps add some follow up questions; Where, when and why does this happen? Are there any common threads? What can I do to prevent this?

Grant and Kristina shared their passions for helping others eat healthy and build community. The NorWest Community Food Centre is located in a high-needs community in North West Winnipeg. It’s a place where people can come together to have a healthy meal, learn new cooking skills, meet friends and neighbours, dig in the garden and get vocal on issues that matter to them. Chef Grant Mitchell plays a vital role and ensures that the NorWest Community Food Centre boasts the tastiest healthiest food possible. Like at other Community Food Centres across Canada (see www.cfccanada.ca for details), NorWest’s community dining room isn’t just a place to eat – it’s a catalyst for individual and community change. With cooking programs that run 6 days a week, regular community lunches, gardening programs, leadership and volunteer training the Centre is a hub of activity. Through our wide range of programming we aim to build health, hope and community in North West Winnipeg.

Chef Grant’s Colcannon Soup

An anxious morning begun wondering what to make for lunch at the Community Food Centre and led to a total triumph of comfort and nutrition! This soup has probably received the greatest number of accolades from community members far. Big response for the kale, too — a lot of people were unsure about it, but it turned out to be a big hit.

Ingredients

2 yellow onions

2 heads of kale, washed and stemmed, then chopped

8 potatoes (yellow or red) washed or peeled, boiled and then mashed by hand

¼ cup roasted garlic paste

1 bunch green onions chopped fine

1 punch parsley chopped fine

1 apple, fine dice

Method

Garlic: Pop 2 heads of garlic into the oven at 350F for ½ hr or so, until you can soft-slip cloves out of skin. When they’re done, mash with broadside of knife.

Onions: While your garlic is roasting, chop onions into quarters, place in pot and cover with water. Add four bay leaves and a few sprigs of fresh thyme and set to boil and simmer until soft. Remove bay leaves and thyme. Puree in food processor until smooth or strain, save your water and finely chop the onions.

Potatoes: Boil until done, but don’t throw away your water! Hand-mash potatoes.

Combine mashed potato, hot potato water, onion puree (and water), kale, roasted garlic, green onions and parsley, and then top with apples.

I served this with Raisin and Oat Soda Biscuits, which fit perfectly with the impromptu Irish theme.
